We went strawberry picking this past weekend and came home with a bounty of fresh, juicy strawberries! I washed and froze half the batch to save for later, but with the rest, I’ve been experimenting with a few easy and healthy recipes. Here are three of our favorites from this week—perfect for spring snacking or for getting creative in the kitchen with the kids!
1. Strawberry Banana Smoothie
A creamy, naturally sweet smoothie packed with nutrients—perfect for a quick breakfast or refreshing snack.
Ingredients:
1 cup fresh or frozen strawberries
1 ripe banana
½ cup Greek yogurt
½ cup almond milk (or any milk of choice)
1 tsp honey or maple syrup (optional)
Quick Prep: Blend everything together until smooth. Pour into a glass and enjoy chilled!
2. Quick Strawberry Jam (No Refined Sugar)
A simple, homemade jam that’s perfect for slathering on toast, mixing into oatmeal, or topping off yogurt!
Ingredients:
2 cups chopped fresh strawberries
1–2 tbsp maple syrup or honey (to taste)
1 tbsp chia seeds (optional, for a thicker texture)
½ tsp lemon juice (optional, for added brightness)
Quick Prep: Add the chopped strawberries and your sweetener of choice to a small saucepan over medium heat. Stir and mash the berries as they soften. Cook for about 8–10 minutes, stirring occasionally. If you’re using chia seeds and lemon juice, add them in and simmer for an additional 2 minutes. Let the jam cool, then transfer to a jar and store in the fridge for up to a week.
3. Healthy Strawberry Muffins
These muffins are soft, fluffy, and lightly sweet—perfect for breakfast, snacks, or even a midday pick-me-up!
Ingredients:
1½ cups whole wheat flour (or all-purpose)
1 tsp baking powder
½ tsp baking soda
Pinch of salt
1 egg
½ cup Greek yogurt or applesauce
¼ cup honey or maple syrup
â…“ cup milk (dairy or plant-based)
1 tsp vanilla extract
1 cup chopped strawberries
Quick Prep: Preheat the oven to 350°F (175°C). In one bowl, whisk together the wet ingredients. In another, mix the dry ingredients. Combine both and gently fold in the chopped strawberries. Spoon the batter into a muffin tin lined with cups. Bake for 18–22 minutes, or until a toothpick comes out clean. Let cool before serving.
