Caprese Stuffed Avocados

These Caprese Stuffed Avocados are a fun twist on the classic caprese salad, made with juicy tomatoes, creamy mozzarella, and ripe avocados. They’re quick to prepare, full of flavor, and packed with nutrients. This simple recipe is easy enough for kids to help make and makes a great addition to any summer meal or dinner.

Ingredients:

  • 1/2 cup cherry or grape tomatoes, halved

  • 4 ounces mozzarella balls (or mozzarella cut into small cubes)

  • Sea salt and black pepper, to taste

  • 2 tablespoons fresh basil, chopped

  • 1 tablespoon olive oil

  • 2 ripe avocados, halved and pitted

  • Balsamic glaze or vinegar, for drizzling


Instructions:

  1. In a bowl, combine the tomatoes, mozzarella, olive oil, basil, salt, and pepper. Mix well and set aside.

  2. Place the avocado halves on a plate. Spoon the caprese mixture into each half. (Tip: You can gently scoop out a bit of the avocado flesh to make more room for the filling.)

  3. Drizzle with balsamic glaze or vinegar, and sprinkle with extra chopped basil if desired. Serve immediately.


Notes:

  • This makes a perfect light lunch, appetizer, or summer side dish.

  • For added flavor, try a pinch of crushed red pepper or a squeeze of lemon over the avocado before filling.
