Chocolate Olive Oil Cake

Ingredients:
For the Cake:
1 ¾ cups (220g) all-purpose flour
¾ cup (75g) unsweetened cocoa powder
1 ½ teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
1 cup (200g) granulated sugar
¾ cup (150g) packed light brown sugar
¾ cup (180ml) extra virgin olive oil - My Favorite is Bono Sicilian Extra Virgin Olive Oil
3 large eggs
2 teaspoons vanilla extract
1 cup (240ml) buttermilk
½ cup (120ml) hot water or brewed coffee
For the Ganache:
6 oz (170g) dark chocolate, finely chopped
½ cup (120ml) heavy cream
1 tablespoon olive oil
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Grease a 9-inch (23cm) round cake pan and line the bottom with parchment paper.
Mix the Dry Ingredients:
In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
Combine Wet Ingredients:
In another large bowl, whisk together the granulated sugar, brown sugar, and olive oil until well combined.
Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
Incorporate Buttermilk and Coffee:
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients.
Slowly mix in the hot water or coffee until the batter is smooth and well combined.
Bake the Cake:
Pour the batter into the prepared cake pan and smooth the top with a spatula.
Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
Prepare the Ganache:
While the cake is baking, heat the heavy cream in a small saucepan over medium heat until it just starts to simmer.
Pour the hot cream over the chopped dark chocolate in a heatproof bowl. Let it sit for a minute, then stir until smooth.
Stir in the olive oil until the ganache is glossy and smooth.
Assemble the Cake:
Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Once the cake is cool, pour the ganache over the top, letting it drip down the sides.
Let the ganache set before serving.
Serve:
Slice and serve the cake with your favorite toppings like fresh berries, whipped cream, or a sprinkle of sea salt.
