Ingredients

Oat Base:
⅔ cup peanut butter
¾ cup old-fashioned (rolled) oats
2 tbsp maple syrup
Filling Options:
Regular: 1 tbsp peanut butter (per bar)
Protein Boost: ½ cup peanut butter + 3 tbsp protein powder
Chocolate Topping:
1 cup chocolate chips (melted)
2 tsp oil (for melting chocolate)
Flaky sea salt (optional)
Instructions
Make the Oat Base: In a bowl, mix together peanut butter and maple syrup. Stir in the oats until well combined.
Assemble the Cups: Divide the oat mixture evenly into silicone molds, pressing down firmly with a spoon (about 2 tbsp per cup).
Add the Filling:
For a classic version, add 1 tbsp peanut butter on top of each oat cup.
For extra protein, mix peanut butter with protein powder and spread a layer on top of each base.
Freeze: Place in the freezer for 20 minutes.
Melt the Chocolate: While the cups are chilling, melt the chocolate chips with 2 tsp oil in the microwave in 30-second intervals, stirring in between until smooth.
Top with Chocolate: Spoon the melted chocolate over each oat cup, ensuring the top is fully coated. Return to the freezer for another 20 minutes.
Enjoy! Once set, remove from molds, sprinkle with flaky sea salt, and enjoy your delicious peanut butter oat cups!
MOLDS
I used rectangular molds to make them look like bars, but you can use any silicone mold shape you prefer. Here are my recommended options from Amazon - Link Here
