Healthy Banana Bread (One Bowl!)

Ingredients:

3 ripe bananas (mashed)
2 eggs
¼ cup maple syrup or honey
¼ cup melted coconut oil (or olive oil)
1 tsp vanilla extract
1 ½ cups whole wheat flour (or oat flour for gluten-free)
1 tsp baking soda
½ tsp cinnamon (optional)
¼ tsp salt
Optional: ¼ cup chopped walnuts, dark chocolate chips, or blueberries
Instructions:
Preheat your oven to 350°F (175°C). Grease a loaf pan or line with parchment paper.
In a large bowl, mash bananas. Whisk in eggs, maple syrup, oil, and vanilla until smooth.
Add flour, baking soda, cinnamon, and salt. Stir until just combined (don’t overmix).
Fold in any optional add-ins.
Pour batter into the loaf pan.
Bake for 45–55 minutes, or until a toothpick comes out clean.
Let it cool in the pan for 10–15 minutes before slicing.
Storage:
Keeps well in the fridge for 5 days, or freeze slices for a grab-and-go snack!
