One-Pan Chicken Fajitas

This quick and easy one-pan meal is perfect for busy weeknights. With minimal prep and cleanup, you can have a flavorful, protein-packed dinner ready in just 30 minutes. It’s family-friendly, meal-prep approved, and can easily be customized to your liking.

Ingredients:
1.5 lbs boneless, skinless chicken breasts, sliced
1 red bell pepper, sliced
1 yellow onion, sliced
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1/2 tsp garlic powder
Salt and pepper to taste
1 avocado, sliced (for serving)
Whole wheat tortillas or lettuce wraps
Instructions:
Preheat oven to 400°F (200°C).
On a sheet pan, combine chicken, bell pepper, and onion.
Drizzle with olive oil and season with chili powder, cumin, garlic powder, salt, and pepper. Toss to coat.
Spread everything evenly and bake for 20 minutes, or until chicken is fully cooked.
Serve with sliced avocado and your choice of whole wheat tortillas or lettuce wraps.
Vegetarian Option:
Swap the chicken for a can of rinsed chickpeas or extra-firm tofu cubes. Roast the same way with veggies and spices for a delicious plant-based alternative.
