Scrambled Egg Wraps

These Scrambled Egg Wraps are a quick and satisfying breakfast option that's perfect for a busy morning. Feel free to customize them with your favorite toppings or seasonings!



Ingredients:

  • 2 eggs

  • 1 tomato or 5-6 cherry tomatoes, diced

  • 2-3 mushrooms, sliced

  • 2 tortilla wraps

  • Grated cheese

  • Salt and pepper (to taste)

  • Cooking oil

Instructions:

  1. In a bowl, crack the 2 eggs and whisk them together until the yolks and whites are well combined. Season with a pinch of salt and a dash of pepper.

  2. Heat a non-stick skillet over medium-high heat and add a little cooking oil. Once the oil is hot, add the diced tomatoes and sliced mushrooms. Sauté them for about 2-3 minutes, or until they become tender and slightly browned.

  3. Reduce the heat to medium and pour the whisked eggs into the skillet and scramble

  4. Place your tortilla wraps on a clean surface, add cheese and cooked eggs.

  5. Carefully roll up the wraps

  6. You can enjoy these Scrambled Egg Wraps immediately or, if you prefer, you can lightly toast them in a pan for a crispy finish.
