Vegetable Soup

A hearty and wholesome soup filled with colorful vegetables and protein-rich beans. Perfect for chilly days, it's packed with flavor and nutrients.
Ingredients:
½ cup (120ml) extra virgin olive oil
1 large onion, finely chopped
3 garlic cloves, minced
2 carrots, diced
2 celery stalks, diced
2 medium potatoes, peeled and cubed
1 cup (150g) butternut squash, peeled and cubed
1 zucchini, diced
1 cup (150g) kale or spinach, chopped
1 can (14 oz/400g) diced tomatoes
4 cups (1 liter) vegetable broth
1 cup (240ml) water
1 cup (240g) cooked white beans (cannellini or navy beans)
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
Salt and black pepper, to taste
¼ cup (60ml) extra virgin olive oil, for drizzling
Grated Parmesan cheese (optional)
Crusty bread, for serving
Instructions:
1. Sauté the Base
Heat ½ cup of olive oil in a large pot over medium heat. Add the onion, garlic, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and fragrant.
2. Add the Hearty Vegetables
Stir in the potatoes, butternut squash, and zucchini. Let them cook for another 5 minutes, allowing the flavors to meld.
3. Build the Broth
Pour in the diced tomatoes, vegetable broth, and water. Stir well to combine.
4. Season and Simmer
Add the thyme, rosemary, bay leaf, salt, and pepper. Bring the soup to a gentle boil, then reduce the heat to low. Simmer uncovered for 20 minutes.
5. Add the Final Ingredients
Stir in the white beans and chopped kale or spinach. Let the soup cook for another 10 minutes, until the greens are wilted and everything is heated through.
6. Finish and Serve
Remove the bay leaf and taste for seasoning, adjusting if needed. Drizzle the soup with the remaining ¼ cup of olive oil for a rich finish.
Ladle into bowls, sprinkle with grated Parmesan cheese if desired, and serve with warm crusty bread.
